01 - Preheat oven to 375°F. Line small baking sheet with parchment paper.
02 - Place Brie wheel on prepared baking sheet. Score top with sharp knife in crosshatch pattern if desired.
03 - Spread apricot preserves evenly over Brie. Sprinkle chopped pecans on top and drizzle with honey if using.
04 - Bake 12–15 minutes until cheese is soft and starting to ooze but not completely melted.
05 - Remove from oven and let stand 2–3 minutes. Transfer to serving platter and garnish with fresh thyme if desired.
06 - Serve warm with crackers or sliced baguette.
