01 - In a medium bowl or jar with lid, whisk together lemon juice, Dijon mustard, honey or maple syrup, garlic, salt, and pepper until thoroughly blended.
02 - Slowly drizzle olive oil into mixture while whisking continuously. Alternatively, add oil to jar, seal tightly, and shake vigorously until fully emulsified and creamy.
03 - Taste dressing and adjust seasoning as desired. Add more honey for sweetness, extra lemon juice for acidity, or additional salt to taste.
04 - Use immediately on salads, grain bowls, or roasted vegetables. Refrigerate in airtight container up to 1 week. Shake or stir well before each use.
