# What You'll Need:

→ Vegetables

01 - 1 tablespoon olive oil
02 - 1 small yellow onion, finely chopped
03 - 1 red bell pepper, diced
04 - 2 garlic cloves, minced
05 - 1 can (14 oz) diced tomatoes

→ Spices & Seasonings

06 - 1 teaspoon ground cumin
07 - 1 teaspoon smoked paprika
08 - 1/4 teaspoon chili flakes
09 - Salt and pepper, to taste

→ Eggs

10 - 4 large eggs

→ Garnishes

11 - 2 tablespoons fresh parsley or cilantro, chopped
12 - Crumbled feta cheese (optional)

# How-To Steps:

01 - Heat olive oil in large skillet over medium heat. Add chopped onion and sauté 2–3 minutes until softened and translucent.
02 - Add diced bell pepper to skillet. Cook 3–4 minutes until peppers begin to soften and edges start to brown.
03 - Stir in minced garlic, cumin, smoked paprika, and chili flakes. Cook 1 minute until fragrant, stirring constantly to prevent burning.
04 - Pour diced tomatoes with juices into skillet. Season generously with salt and pepper. Simmer 5–6 minutes, stirring occasionally, until sauce thickens slightly.
05 - Create 4 small wells in sauce using spoon. Crack one egg into each well, taking care not to break yolks.
06 - Cover pan with lid. Cook 5–7 minutes until egg whites are completely set but yolks remain runny. Extend cooking time 2–3 minutes for firmer yolks.
07 - Remove from heat immediately. Sprinkle chopped parsley or cilantro over top. Add crumbled feta if desired. Serve hot directly from skillet.

# Expert Suggestions:

01 -
  • Its the ultimate one-pan meal that feels fancy but comes together with pantry staples
  • The runny yolks create their own rich sauce when you tear into them with crusty bread
  • You can adjust the spice level to make it exactly how your family likes it
02 -
  • A lid that fits your skillet properly is crucial—steam is what cooks the eggs from above while the sauce bubbles below
  • Room temperature eggs wont shock the hot sauce and will cook more evenly
  • Resist the urge to poke the eggs while they cook, or youll break those gorgeous yolks
03 -
  • If your sauce looks too thick before adding eggs, splash in a tablespoon of water
  • Use the back of a spoon to create deeper wells so the eggs stay in place
  • The sauce continues to thicken as it stands, so dont reduce it too much
