01 - Preheat your oven to 425°F.
02 - Pat the lamb chops dry with paper towels.
03 - In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and pepper to create a marinade.
04 - Rub the marinade evenly over both sides of the lamb chops.
05 - Heat a large ovenproof skillet over medium-high heat. Sear the lamb chops for 2 minutes per side until browned.
06 - Transfer the skillet to the preheated oven. Roast for 6–8 minutes for medium-rare, or longer for desired doneness.
07 - Remove from the oven, tent with foil, and let rest for 5 minutes before serving.
08 - Garnish with lemon wedges and additional rosemary if desired.
